Quesadillas

Mexican quesadilla is now a days very popular in India. People are willing to try more and more of mexican cuisine. A quesadilla is a tortilla containing a savoury mixture of cheese and other stuffing such as kidney beans and other veggies. A quesadilla is basically a mexican styled pan cake, like a toasted sandwich, made with 2 tortillas sandwiched. It's really yummy ans easily acceptable as it matches the indian taste. 
Quesadillas are best served with salsa & tomato sauce. Now a days restaurants serve quesadillas in various ways.. Some serve as appetizers after giving it a twist. Many serve them as a main course meal by toasting 2 tortillas with generous amount of cheese and veggies mixture.
And some even serve it as dessert using choclate mixture.


Ingredients : 

For dough:
Refined flour 1/2 cup
Corn meal flour 1/4 th cup
Corn flour 1 spoon 
Oil -1 spoon
Salt
Chilly flakes
Oregano
Pepper


For filling 
Baked beans mixture
Oil - 2spoons 
1/2 cup beans ( small kidney beans i.e rajma soaked overnight)
Bay leaf -1
Tomato puree: 1 cup 
Tomato ketchup: 2-3 spoons
Corn , capsicum and cabbage ( 1 cup)
Pepper 
Salt 
Oregano 
Chilly flakes ( all as per taste)

White sauce (as given in earlier recipes)

And
Paneer 
Baby corn 
Capsicum 
Jalepanoes
Green chillies 

Method: 

 For making tortillas
Take all ingredients mentioned for dough and make a soft dough 
Make two round tortillas and cook it in a  pan on a medium flame till it is half done. 
Dont make it crisp. 

For filling
For baked beans :
Heat a pan 
Add  2 spoon full of oil , add green chillies and then tomato puree to it..
Now put soaked beans and cook till it simmers. 
Now add capsicum, corn and cabbage 
Add tomato sauce, red chilly powder, oregano, chilly flakes, black pepper , chilly flakes and salt.
And cook till the sauce gets reduced.

Prepare 1 cup of thick white sauce as given in corn cheese ball and pasta recipe. 
 
For final mixture: 
Heat oil in a pan and add chillies, capsicum and chopped baby corn 
Now add white sauce, graded paneer and baked beans mixture and stirr well.
Season the mixture with salt, pepper,oregano and chilly flakes 
And now the filling is ready 

Now for assembling, 
Take one tortilla base and spread the filling all over it. 
Cover the filling witg graded cheese and add some jalepaneos 
More cheesy and it will be more tasty
Now put the other tortilla over it 

Heat a pan and toast the quesadilla applying butter..
Neither too soft nor too crispy..

Cut triangles and serve it as you want..
And enjoy tasty quesadilla

Home made chocolates

Choclates...be it kids or thier parents no one can resist to this yummiest treat..instead of gifting your loved ones box of Choclates from stores, why not make it at home with your magic touch. 
Everyone has a different taste.. Some like plain Choclates, some like it with almond twist, many of us like raisins n even cashews in it... And mostly that nutty taste of caramel and rice crunches..
My favourite is choclate filled with caramel sauce , which I will share soon.
This one is for beginners..
So here is a very very easy recipe of homemade Choclates.. Quick and fast..
And best part is that you can add the nuts of your choice..
You can even involve kids while making Choclates. I m sure they will love it.
Choclates comes in a never ending varieties.
Today m sharing the most easiest form of it..




Ingredients:

Dark chocolate compound (1 slab )
Milk chocolate compound  (1slab )
Rice balls ( 5-6 spoons)
Hazel nut crunch (2-3 spoons )
Walnut ( 2-3 spoons ) 
Almonds (2-3 spoons)
Caramel crunch (2-3 spoons )

Method:
Take a microwave proof bowl . Add slabs of dark and milk compound in equal quantities and microwave it for 1 n a half minute. 

Once your chocolate melts take it out. Don't over heat the chocolate else it will get burnt. 
If ur slab is in room temperature then 1n a half minute on microwave high is more than enough.

Mix the choclate And then add nuts of your choice. Here I m using almonds and walnuts 
Add rice balls. They are easily available in supermarkets. 
If u like ferrero rocher that for that taste in your choclates you can add hazel nuts.
Roughly crush the nuts And add them to the melted choclate batter.
I love caremal crunch in my choclates so you can even add them otherwise its optional.

Mix everything properly and with a help of a  spoon pour in to the mould of your choice.
Refrigerate your choclates for 10 min amd remove from the freezer.
If choclates dont come out by its own that means it needs some more time to set.
Pack ur choclate with attractive covers easily available in market and impress your loved ones

Fusion risotto

Hello  friends, I know long time I haven't posted anything but now I have a very interesting recipe for you all. 



Risotto is a famous Italian dish which is usually made using arborio rice and authentic cheese combinations but here I am trying to give it a Indian twist by using left over vegetable pulav that's a very common Indian dish. 
Risotto is often made by cooking arborio rice with butter, onion and vegetable stock and it's given a creamy consistency by using cheese and cream. But I have slightly changed the method and hopefully you all like it"
Here I go : 

We need : 




Vegetable pulav -1cup
Milk - 1 cup 
All purpose flour- 2spoons 
Boiled corn - 1/2 cup 
Chopped spinach - 1/2 cup 
Cheese slices - 2 
Mozzarella cheese 
Butter - 2 to 3 spoon 
Basil- 4 to 5 leaves 
Oregano 
Chilly flakes
Powdered black pepper 
Salt 
Capsicum, basil and tomato ketchup for Garnish 
Garlic bread


Method

Heat a pan on medium flame. Add butter 
And let it melt ( you can add oil with butter so that the butter doesn't get burnt )
Now add all purpose flour (maida )
And cook it well for atleast 2 minutes 
Add some milk and stirr it well so that I doesn't get lumps in it..
Add corn , half of the chopped basil leaves and spinach and cook well 
Mix it very well 
Add oregano 
Chilly flakes 
Salt 
Pepper 
And now it's time to add our pulav to the mixture 

Add some yummy slices of cheese 
And some mozzarella cheese 
And stirr it well 
Your fusion risotto is ready 

Use a round mould and put the risotto in your plate and garnish with capsicum, basil and few drops of Tomato ketchup
Serve it with garlic bread

Exotic fried rice


Hello friends, 
Today I have prepared a rice dish which is so easy that anyone can cook very easily in very less time. And it is also very tasty. When your kids say no to veggies , this is the smartest way to make them eat all these healthy veggies. You can add other veggies of your choice. I have chosen to prepare it Jain so I have not used onion and garlic. 
Broccoli has a great nutrient value so I use it in good quantity. 
Try this and I m sure it will be a part of your daily cooking menu. 

Ingredients: 
Corn 1 small cup 
Baby corn 6 pc
Cabbage ( shredded )
Purple cabbage ( shredded )
Capsicum ( green, yellow, red )
Broccoli ( boiled )
Boiled rice ( 2 cups )
Oregano 
Chilli flakes 
Pepper powder 
Salt 
Coriander 



Method : 
Heat a nonstick pan and add butter to it.
You can replace butter with olive oil as it's very healthy and will enhance the taste too 
When your butter melts add veggies and sauté for just a minute. 
Add salt, pepper, oregano & chilly flakes 
Now add boiled rice to it. 
Cook well on high flame. 
And your healthy exotic fried rice is ready 
Serve it hot.. You can add cheese too.

Chocolate cake


Hello friends... Today I m sharing chocolate cake recipe with you all. 
There is hardly anyone who will not like to Have this yummiest dessert. Chocolate cake is the most demanded recipe. I hope that all my readers are going to love me for this one. My family loved it.. So now it's time for you to impress your loved ones 


Ingredients:
Maida (all purpose flour): 1 cup 
Cocoa powder: 3 tbsp
Coffee powder: 1/2 tbsp
Salt: 1 pinch 
Curd: 1 cup (fresh)
Ground sugar: 1 cup
Baking powder: 1 tsp
Baking soda: 1/2 tsp
Refined oil or melted butter: 1/2 cup
Vanilla essence: 1/2 tsp
Riped banana pury: 1 (1 banana )
Chopped roasted almonds and walnut: 1/2 cup 
Milk as required

For icing : 
Dark chocolate compound 1 cube
Milk chocolate compound  1 cube 
White chocolate compound  1 cube
Fresh cream : 1 spoon 
Whipped cream: 1 bowl 
Chocolate balls for decoration 
Chocolate sticks for decoration 

Method:

Seive maida, cocoa powder, coffee and salt.


In a separate bowl take curd, ground sugar, baking powder and baking soda  and mix it well with the help of a beating machine. When it starts bubling add melted butter or oil, essence and banana purée. Mix it well 
Now add sieved maida mixture and almonds 
(Banana acts as a leavening and raising agent . It is a perfect substitute of an egg
It makes your cake fluffy and soft) 

Add milk aa required and make a smooth batter 
This batter is comparatively smoother than normal cakes 

Pour the batter in a greased tin and bake it in a preheated oven at 180 degree for 35 to 40 mins 



After baking keep the mould to rest for 15 mins and then take the cake out


After the sponge cake is At normal temperature, take a knife and cut the cake in 2 equal parts. 

For choc  Ganash: take one cube of dark chocolate compound and one cube of milk  chocolate compound and let it melt in a microwave for 2 minutes. 
Take care that the chocolate doesn't get over cooked. 
Mix 1 spoon fresh cream to the mixture
Make sure that the cream is at room temperature other wise the ganash will become extra thick 
Spread ganash equally in middle layer, top layer and All the sides of the cake with help of a palate knife .
After this, take white compound chocolate and melt it and add it in a cone. 
Make straight horizontal lines on the cake 
With white chocolate 
With the help of a toothpick first take the toothpick downward and next line upwards. N repeat it 

With the help of icing bag , use nosals and make small flower with whipped cream 
And use choco sticks to surround the cake and make it more presentable and tasty 

Now use chocolate balls to complete the garnishing and your chocolate cake is all set to eat. 

Try this cake for sure.. You are going to get too many complements for it.

Dill kababs


Hello friends.. Don't go just by the name. It's not usual Dil shaped kababs. I have prepared my kababs using DILL leaves which is popularly called sua in Hindi.
As its winter time, variety of greens are easily available in markets. 
DILL leaves has a unique but pleasant flavour. And it's very benificial for our body too. It's a great anti- oxidant & contains disease preventing as well as health promoting properties.
Dill leaves are use in preparing vegetables but I know kababs will give a interesting twist to it.
It's rich in many vital vitamins like frolic acid, vitamin A & vitamin C that is essential for optimum metabolism in human body.
So please try and taste this unique recipe 
I m sure you will love it 

Ingrediants: 
Chopped Dill leaves : 2 bowls
Split Bengal gram : 1 bowl ( chana dal)
Coriander : 4 spoons 
Gram flour : 1 bowl ( or less as per consistency )
Green chilly : 4 ( finely chopped)
Red chilly powder : 1 spoon 
Turmeric : 1/4th spoon 
Ajwain : 1/2 spoon ( Carom seeds)
Hing : 1/4th spoon (asafoetida)
Salt to taste 

Process: 
Wash dill leaves with clean water. And  chop finely. Soak chana dal for almost 3 hours and crush it and add red chilly powder, asafoetida(hung), ajwain, salt to the mixture 
Add the crushed chana dal mixture to chopped dill leaves 
Add coriander and chopped green chillies 
Add gram flour as required. 
We hav to keep the batter Thik for making kababs



Grease your hands with oil and shape the kababs 
Heat the oil on medium flame and deep fry the dill kababs 
 



Serve them hot with onion rings and fried green chillies

Thin crust pizza


Pizza needs no definition... The round shaped tasty thing in a square shaped box is almost everyone's choice.

But there is one question every time.
Can we make restaurant type pizzas at home.. And my answer to your question is yes ofcourse.
Thin crust pizza with freshly made dough tastes out of the world.


Ingredients: 

For base:
Maida ( all purpose flour) : 3 cups
Dry Yeast: 1 spoon 
Water: 1 glass 
Sugar: 1/2 spoon 
Salt: to taste 

For pizza:

Veggies for topping 
( green, red & yellow capsicum 
Blanched baby corn, sweet corn )
Jelapano 
Olives
Basil leaves 
Processed cheese 
Mozzarella cheese
Oregano 
Chilly flakes
Salt 

Method: 

For dough:

Take 1 spoon dry yeast in a bowl,  1/2 spoon sugar & pinch of salt. Add 1 glass warm water to the bowl and keep the bowl in dark hot place for atleast 15 mins  to activate. 

Take 3 cup maida( all purpose flour) in a bowl. Add the activated yeast and salt .
Add more water if required. Make a soft dough.
Fold the side of dough downside and grease with oil. Cover it with a wet cloth and keep the dough to ferment for atleast  4 to 5 hours. 

The dough will become almost double of its size. Take the dough out of the bowl and punch it with your hands.

For pizza: 
Take a portion of dough and with help of rolling pin make a round shape roti out of it. Keep dusting with flour, it will become easy to make . 
Heat the pan. Grease it with oil and place the roti to the pan. Cover the pan with a lid for 1 minute.


Turn the pizza base around and spread pizza sauce on the base . Put some mozzarella cheese & top the pizza with veggies given above. You can add any topping of your choice. Add graded cheese on the pizza. Season it with oregano, chilly flakes & salt 
Let the pizza cook for 4 mins on medium flame. 

When the Cheese melts. Your pizza is ready to be served.
