Veggie cottage cheese rolls


My new recipe i.e. Veggie cottage cheese rolls is a starter which looks like spring roll but there is a twist of taste in the filling . The stuffing consists of tandoori paneer and other veggies with smoothness of melted cheese in between. 
Try this starter for your guests and I am sure people will be impressed by you. 
It is deep fried but it can also be baked if you are calorie conscious. 
I am using spring roll sheets but if it's not available nearby you then u can also make fresh dough of all purposes flour I.e maida and use this stuffing.
If u hav left over chapatis then you can make wraps out of it 
Which will also be hit and a power pack meal for your kids. 
So here we go: 

Ingredients 

Spring roll sheets (5-6 nos)
Paneer : 100 GMs 
Cheese: 2 cubes 
Finely chopped onions: 1 small onion 
Chopped Red , yellow and green bell peppers: 1 bowl 
Graded cabbage and carrot : 1 bowl 
Corn : 1/2 bowl 
Finely chopped Jalapeños : 2 spoons 
Garlic butter: 2 spoons 
Red chilly sauce: 1 spoon 
Tomato sauce: 1 spoon 
Cornflour slurry :1 bowl 
Salt 
Pepper
Basil 
Oregano 
Chilly flakes 

For making tandoori paneer: 
Hung curd: 2 spoons 
Gram flour: 3/4th spoon 
Chilly powder : pinch 
Turmeric : 1 pinch
Chat masala: 1 punch 
Fennel seeds (sauf) 
Salt: to taste

Method

Step 1: 
Make tandoori paneer: 
Take a bowl 
Now add 2 spoons of hung curd
(Take curd in a cloth and let the water to strain and keep it for 1 hour. The thick curd that you will get is hung curd) 
Now add chilly powder, turmeric powder, gram flour, fennel seeds, chat masala and salt to taste 
Now our marinade is ready 
Add big cubes of paneer and leave it to marinate for 1 hour.
After an hour take a paneer pieces and place in metal skewers 
And roast it on gastop as you can see in the picture given below.

Once it is roasted from all the sides 
Take it down and cut into small cubes of equal size. 

Step 2: 
Preparing stuffing 

Heat a non stick pan and add garlic butter 
(In case you don't get garlic butter then add regular butter) 
Now add onions and fry till it turns golden 
Now add graded cabbage and carrots 
After a minute add capsicums and corn to it. 
Add jalapeños 
And cubes of tandoori paneer to it. 
Add oregano , chilly flakes, crushed basil leaves , salt 
Add red chilly sauce and tomato sauce to it 
Now add cheese cubes and put the flame off. 
Add coriander for fresh taste and let the mixture cool 

Step3
Take 3spoons of maida (all purpose flour )and 1 spoon cornflour 
Now add salt and water and make a thick paste.

Step 4

Soak the Spring roll sheets in wet cloth so that it remains moist 
Now take one sheet carefully and place it in diagonal direction 
Put some stuffing and roll it as shown in the pics 
Stick the rolls properly with cornflour slurry 


And deep fry the rolls until they give a nice golden colour..

You can refer this collage for better clarity.

Your yummy veggie cottage cheese rolls are ready.

Bread Tacos

Bread Tacos is my innovative recipe. Tocos is a Mexican dish made up with tortilla. I am here giving a twist and presenting my bread tacos.
Easy to make and ingredients are readily available at home.
Serve it next time when your guests come and impress everyone with this dish..
I have used bread and coleslaw( salad).
You must give it a try.


Ingredients :

Bread:  5 nos 
Cabbage ( shredded): 1 small bowl
Capsicum (sliced) :3 spoons 
Carrot ( finely sliced): 3 spoons 
Onion (finely sliced) :1 nos
Corn (boiled): 3 spoons 
Jalapeno peepers (finely chopped) :1 spoon 
Mayonnaise: 2 spoon 
Tomato ketchup : 1 spoon 
Chilly sauce: 1 spoon 
Cheese : 1 cube
Butter: 2 spoons
Chilly flakes 
Oregano
White pepper powder
Salt
Tooth picks to serve 
Tomato for making rose


Method


For filling:

Take a pan and add 1 spoon butter. 
It has to be on medium flame.
Once the butter melts add capsicum, carrots, onions, Jalapeno,corn, and cabbage. Stirr the veggies for just a minute.
Now season it with salt, pepper, oregano and chilly fakes. 
Take this mixture in a bowl.
(Take care that mixture is not overcooked)
Add mayonnaise, tomato ketchup and chilly sauce and stir well. 
And our filling is ready now 
This filling is also called coleslaw

Cut the bread in circles with the help of a mould. And apply butter to both the sides of bread.
Toast the bread on slow flame Till it becomes golden.
Now take the bread. And place the filling in the middle.
After that with the help of a toothpick, shape it like a taco shell. 

Garnish it with graded cheese and tomato rose

Serve with coleslaw

Pickled Jalapeno peppers

Hello friends ,

In today's time when we all are so fond of Italian and Mexican cuisine, many of us face problems with ingredients which are necessary for preparing such dishes at home. And most of the time it is not easily available everywhere I.e you may get it only in superstores. 
Pickled Jalapeno peppers is one of such ingredient. Jalapeno peppers are used as pizza toppings and for making salsa and for many other Italian and mexican dishes . I recently bought a bottle of canned Jalapeno which costed me around 120 rs. 
So I decided to try it at home and after some research i made it and believe me it had exactly the same taste. 
So for all my blog reader, I am here with pickled Jalapeno recipe.
Try it. It's so economical as well as quick With very few ingredients 

PICKLED JALAPENO



Ingredients :

Green chilly ( dark green) : 12-15 nos
Apple cider or regular vinegar. : 1/2 cup 
Water: 1 cup 
Sugar: 2 spoons
Salt : 1 spoon 

Glass bottle: sterelized 


Method :
Sterelize the bottles in hot water.
(It's very simple. Just boil water in a big vessel and place the glass bottle inside 
Keep it for 15 minutes and take out and dry it )

Now cut the chillies in almost equal rounds and wash them with water. 
Excess seeds will be discarded from it.
(Chillies should b pulpy ones which are normally used in pickles )

Now take a pan and add 1 cup of water and 1/2 cup of vinegar ( I am using apple cider vinegar for the exact taste l. You can use normal white vinegar )

Add sugar and salt and let it boil. 
Add the chillies in sterelized jar and now pour the boiled liquid. 

The liquid should be in such proportion that chillies are properly dipped.

Let it cool till it comes to room temperature and then you can refrigerate it after applying the lid of the bottle.
You can use this jalapeños after1 week.

And you can easily preserve it for 6 months.

Crispy potato chilly

Crispy potato chilly is a Chinese starter.. Sweet,spicy and tangy.. Chinese cuisine is the most trending in our food industry and a popular choice amongst all generations.
It's quick and hassle free..
Instantly make it and serve it .I am sure that you will get only appreciation and compliments . This is a starter but it can be also served as a main course dish with Chinese sezwan rice.
So try it and I bet you are going to add it to your menu 


Ingredients 

French fries( frozen)-  1 cup
Garlic( finely chopped) - 1 spoon
Capsicum : Red, yellow and green : 2 spoon each 
Green chilly (finely diced): 2 nos
Tomato sauce : 3-4 spoons
Red chilly sauce : 2-3 spoons
Cornflour: 1spoon 
Sesame seeds( toasted): 1 spoon
Spring onions : for garnish 
Salt to taste 
While pepper powder
Oil: for deep frying  

Method

I am using frozen fries that is readily available in stores but If you cannot manage it then it's quite easy.
Par-boil the potatoes and slice them in vertical slices. Sprinkle cornflour and coat them properly. Now deep freeze the fries for few hours until they turn hard. 

Take the fries in a bowl 
Add cornflour, tomato ketchup ,red chilly sauce , and salt in the bowl and toss well.
Deep fry the fries on a high flame till it becomes crisp.

Take a pan: 
Add 1 spoon of the same oil you used for deep frying 
Now add chopped garlic to the hot oil.
(Chinese dishes are always cooked on high flame )
Now add green chillies and capsicum 
Add remaining tomato sauce and chilly sauce and salt and white pepper powder 
Add the prepared fries to it and give a toss.. Sprinkle toasted sesame seeds and spring onions and serve it hot.

Jain veggie burger

Hello friends,

Burger is a sandwich consisting of a patties inside a sliced bun. It is served with lettuce, tomatoes, onion & cheese. It is a fast food which is now much popular amongst youngsters.
Today there are so many food chains serving different varieties of burgers.
Those who are missing their favorite veggie burgers, I have a good news for you my friends.
Pure jain burgers will now be in your plate without compromising in taste.Usually the patty of burger is made with potatoes but as we know its jain burger so i have made it with raw bananas, cabbage , peas & corn. Kids usually love burgers so now make it at your home and confuse them with the taste and i am sure that nobody will come to know that its pure jain.


Ingredients:

Burger buns ( 2 buns) 
Iceberg lettuce  - 4-6 leaves 
Sliced Tomatoes - 2-4 slices 
Sliced Cucumber- 2-4 slices 
Cheese slice - 2 slices 

For Patties
Raw Banana- 2 unpeeled 
Green Peas - 1 bowl 
Corn - 1 bowl 
Cabbage - 1 bowl  
Green Chillies - 2 to 3
Garam masala - 1 spoon 
Chaat masala - 1 spoon 
Salt
Coriander 
maida & cornflour paste
Breadcrumbs for coating

For mayo dip:
Mayonnaise  - 3 spoons 
Tomato sauce - 1 spoon 
Chilly sauce - 1/2 spoon 
Chilly flakes
Oregano
Salt 
White pepper powder 


Method:
For patties:

Cook the raw bananas with the skin in a pressure cooker till 2-3 whistles and after that take the bananas out and remove the skin with the help of a knife.
mash it immediately so that it doesn't become hard. And take this mashed banana in a plate

In a mixture jar take boiled corn and boiled peas. Add some green chillies  and grind it.
See to it that u don't make a fine paste of it . Grind it just twice or thrice so that corn and peas are half crushed. It will give a desired texture to our patties

Now add it with mashed banana 
Take a cabbage and grade it finely 

So now you have mashed raw banana, peas-corn mixture and graded cabbage 
Now add garam masala, chaat masala and salt to it and mix it well.

Raw banana does a great binding job so you might require bread crumbs in mixture.
 
Add coriander leaves and finally make round patties shape.
Be sure that your patties match with d size of bun.
Neither should it b too small nor too big.

Make maida cornflour slurry( paste) 
( 1 spoon maida+1 spoon cornflour + salt + white pepper powder + water)

Dip the patty in the slurry and then cover it with breadcrumbs.
Deep fry it in oil at medium flame till its crisp and golden.


For mayo dip
Take mayonnaise in a bowl 
Add tomato ketchup and red chilly sauce 
Then add salt, white pepper powder , oregano and chilly flakes 
And ur mayo dip is ready 


To assemble the burger
Cut the bun in an equal half 
And roast only the inner side of bun with butter on a plan 
Now take the lower half of the bun and spread the mayo dip on it 
Now add sliced tomatoes and cucumber
Take some leaves of iceberg lettuce and put on your burger
Now keep the ready Pattice on it
And cover it with cheese slice.
 Microwave it just for 10 seconds so that the cheese sticks to the patties 
Take care that the patty doesn't loose its crisp 
You can even avoid the microwave process 

Now cover it with the top of bun.
And tasty yummy and delicious burger is ready 

Serve it with cucumber slices, tomato rose and banana chips.. 
And get ready for too many compliments.

Cheesy green croquettes

A croquette is a breadcrumbed fried food roll mainly containing mashed potatoes, veggies and cheese etc similar like Indian kebabs but as you know I am here with Jain recipies so now introducing cheesy green croquettes.
Have a bite and it melts in your mouth.
And also a Best monsoon dish.
Try it and I m sure you are gonna love it.
Serve it with ur favourite dips or ketchup or chutney. 

So here we go

Ingredients :

Soaked chickpeas - 1 bowl
Boiled sweet corn -1 bowl
Boiled green peas - 1 bowl
Boiled spinach - 1/2 bowl 
Basil leaves- 2-3
Green chillies - 3
Breadcrumbs - 1/2 bowl 
Cornflour- 2 spoons ( or more if required) 
Cheese cubes  as required 
Chilly flakes - 1/2 spoon
Chat masala- 1/2 spoon 
Garam masala - 1/2 spoon 
Coriander leaves 
Salt to taste
Slurry ( maida i.e all purpose flour + cornflour + water ) for coating 
Breadcrumbs for coating 

Method :
 Pressure cook the soaked chickpeas until one whistle 
Then take chickpeas, boiled sweet corn, boiled green peas and boiled spinach, basil leaves & green chillies  in a mixer jar.
Mix till it becomes a thick paste 

Take the paste out and add bread crumbs, cornflour , chilly flakes, chaat masala, garam masala, salt and corainder leaves.
The paste should b such that u can easily make rolls out if it 
If the paste is loose then u can add more. Breadcrumbs to it. 

Make small rolls and stuff the rolls with cheese. Roll it carefully so that cheese doesn't come out while deep frying 

Now dip the rolls in d maida cornflour paste ( slurry) and coat it with breadcrumbs .

Deep fry it till it becomes golden brown 


And your tasty croquettes are ready to serve.
Serve it with tasty mayo dip ( just add a spoon of tomato ketchup and chilly flakes to mayonnaise ) and cabbage salad 
 
U can cut these croquettes into half and serve it with tooth picks 











Pasta salad



Tasty pasta salad
Hello friends ... My new dishes are specially for my Jain friends who are going to avoid onions & potatoes for these 2 months .Dont think that you will have to grab some monotonous food. Ritz recipes here presents few tastiest Jain recipies.. Do try this and enjoy.

So today I m making pasta salad. 
You can use any pasta of ur choice 
Penne, maccroni, fusilli ( twister) or farfalle ( butterfly shaped).. Or even colourful pastas that are now easily available in stores. 
It's pasta salad so it's surely very healthy. 
I am using wheat pasta to make it even more healthier. You can use any vegetable you like for making this salad.
Let's get started. 




Ingredients :

Whole wheat pasta : 1 bowl ( boiled Al- dente ) 
Veggies: 
Green  capsicum 
Red capsicum 
Yellow capsicum ( half bowl)
Cabbage : finely shredded (1 bowl )
Sweet corn : half bowl 
Baby corn  : 2-3 spoons 
Basil ( optional) 

For dressing 
Veg Mayonnaise - 4 medium spoons 
Tomato ketchup - 2 spoons 
Red chilli sauce  - 1 spoon 
Oregano - 1/2 spoon 
Chilly flakes - 1/2 spoon 
White pepper powder - 1/4 th spoon 
Salt  to taste 


Method

Boil water with salt and oil and then add pasta and boil it al-dente i.e there should be a bite in pasta ( do not over cook it)

Chop your veggies and keep ready in a plate 

Now add pasta and veggies together in a bowl and mix it well.

Add veg mayonnaise, tomato ketchup, red chilli sauce , oregano, chilly flakes, white pepper powder and salt.

Your pasta salad is ready

Refrigerate it and serve it cool .
Garnish it with some fresh basil leaves

Quesadillas

Mexican quesadilla is now a days very popular in India. People are willing to try more and more of mexican cuisine. A quesadilla is a tortilla containing a savoury mixture of cheese and other stuffing such as kidney beans and other veggies. A quesadilla is basically a mexican styled pan cake, like a toasted sandwich, made with 2 tortillas sandwiched. It's really yummy ans easily acceptable as it matches the indian taste. 
Quesadillas are best served with salsa & tomato sauce. Now a days restaurants serve quesadillas in various ways.. Some serve as appetizers after giving it a twist. Many serve them as a main course meal by toasting 2 tortillas with generous amount of cheese and veggies mixture.
And some even serve it as dessert using choclate mixture.


Ingredients : 

For dough:
Refined flour 1/2 cup
Corn meal flour 1/4 th cup
Corn flour 1 spoon 
Oil -1 spoon
Salt
Chilly flakes
Oregano
Pepper


For filling 
Baked beans mixture
Oil - 2spoons 
1/2 cup beans ( small kidney beans i.e rajma soaked overnight)
Bay leaf -1
Tomato puree: 1 cup 
Tomato ketchup: 2-3 spoons
Corn , capsicum and cabbage ( 1 cup)
Pepper 
Salt 
Oregano 
Chilly flakes ( all as per taste)

White sauce (as given in earlier recipes)

And
Paneer 
Baby corn 
Capsicum 
Jalepanoes
Green chillies 

Method: 

 For making tortillas
Take all ingredients mentioned for dough and make a soft dough 
Make two round tortillas and cook it in a  pan on a medium flame till it is half done. 
Dont make it crisp. 

For filling
For baked beans :
Heat a pan 
Add  2 spoon full of oil , add green chillies and then tomato puree to it..
Now put soaked beans and cook till it simmers. 
Now add capsicum, corn and cabbage 
Add tomato sauce, red chilly powder, oregano, chilly flakes, black pepper , chilly flakes and salt.
And cook till the sauce gets reduced.

Prepare 1 cup of thick white sauce as given in corn cheese ball and pasta recipe. 
 
For final mixture: 
Heat oil in a pan and add chillies, capsicum and chopped baby corn 
Now add white sauce, graded paneer and baked beans mixture and stirr well.
Season the mixture with salt, pepper,oregano and chilly flakes 
And now the filling is ready 

Now for assembling, 
Take one tortilla base and spread the filling all over it. 
Cover the filling witg graded cheese and add some jalepaneos 
More cheesy and it will be more tasty
Now put the other tortilla over it 

Heat a pan and toast the quesadilla applying butter..
Neither too soft nor too crispy..

Cut triangles and serve it as you want..
And enjoy tasty quesadilla

Home made chocolates

Choclates...be it kids or thier parents no one can resist to this yummiest treat..instead of gifting your loved ones box of Choclates from stores, why not make it at home with your magic touch. 
Everyone has a different taste.. Some like plain Choclates, some like it with almond twist, many of us like raisins n even cashews in it... And mostly that nutty taste of caramel and rice crunches..
My favourite is choclate filled with caramel sauce , which I will share soon.
This one is for beginners..
So here is a very very easy recipe of homemade Choclates.. Quick and fast..
And best part is that you can add the nuts of your choice..
You can even involve kids while making Choclates. I m sure they will love it.
Choclates comes in a never ending varieties.
Today m sharing the most easiest form of it..




Ingredients:

Dark chocolate compound (1 slab )
Milk chocolate compound  (1slab )
Rice balls ( 5-6 spoons)
Hazel nut crunch (2-3 spoons )
Walnut ( 2-3 spoons ) 
Almonds (2-3 spoons)
Caramel crunch (2-3 spoons )

Method:
Take a microwave proof bowl . Add slabs of dark and milk compound in equal quantities and microwave it for 1 n a half minute. 

Once your chocolate melts take it out. Don't over heat the chocolate else it will get burnt. 
If ur slab is in room temperature then 1n a half minute on microwave high is more than enough.

Mix the choclate And then add nuts of your choice. Here I m using almonds and walnuts 
Add rice balls. They are easily available in supermarkets. 
If u like ferrero rocher that for that taste in your choclates you can add hazel nuts.
Roughly crush the nuts And add them to the melted choclate batter.
I love caremal crunch in my choclates so you can even add them otherwise its optional.

Mix everything properly and with a help of a  spoon pour in to the mould of your choice.
Refrigerate your choclates for 10 min amd remove from the freezer.
If choclates dont come out by its own that means it needs some more time to set.
Pack ur choclate with attractive covers easily available in market and impress your loved ones

Fusion risotto

Hello  friends, I know long time I haven't posted anything but now I have a very interesting recipe for you all. 



Risotto is a famous Italian dish which is usually made using arborio rice and authentic cheese combinations but here I am trying to give it a Indian twist by using left over vegetable pulav that's a very common Indian dish. 
Risotto is often made by cooking arborio rice with butter, onion and vegetable stock and it's given a creamy consistency by using cheese and cream. But I have slightly changed the method and hopefully you all like it"
Here I go : 

We need : 




Vegetable pulav -1cup
Milk - 1 cup 
All purpose flour- 2spoons 
Boiled corn - 1/2 cup 
Chopped spinach - 1/2 cup 
Cheese slices - 2 
Mozzarella cheese 
Butter - 2 to 3 spoon 
Basil- 4 to 5 leaves 
Oregano 
Chilly flakes
Powdered black pepper 
Salt 
Capsicum, basil and tomato ketchup for Garnish 
Garlic bread


Method

Heat a pan on medium flame. Add butter 
And let it melt ( you can add oil with butter so that the butter doesn't get burnt )
Now add all purpose flour (maida )
And cook it well for atleast 2 minutes 
Add some milk and stirr it well so that I doesn't get lumps in it..
Add corn , half of the chopped basil leaves and spinach and cook well 
Mix it very well 
Add oregano 
Chilly flakes 
Salt 
Pepper 
And now it's time to add our pulav to the mixture 

Add some yummy slices of cheese 
And some mozzarella cheese 
And stirr it well 
Your fusion risotto is ready 

Use a round mould and put the risotto in your plate and garnish with capsicum, basil and few drops of Tomato ketchup
Serve it with garlic bread

Exotic fried rice


Hello friends, 
Today I have prepared a rice dish which is so easy that anyone can cook very easily in very less time. And it is also very tasty. When your kids say no to veggies , this is the smartest way to make them eat all these healthy veggies. You can add other veggies of your choice. I have chosen to prepare it Jain so I have not used onion and garlic. 
Broccoli has a great nutrient value so I use it in good quantity. 
Try this and I m sure it will be a part of your daily cooking menu. 

Ingredients: 
Corn 1 small cup 
Baby corn 6 pc
Cabbage ( shredded )
Purple cabbage ( shredded )
Capsicum ( green, yellow, red )
Broccoli ( boiled )
Boiled rice ( 2 cups )
Oregano 
Chilli flakes 
Pepper powder 
Salt 
Coriander 



Method : 
Heat a nonstick pan and add butter to it.
You can replace butter with olive oil as it's very healthy and will enhance the taste too 
When your butter melts add veggies and sauté for just a minute. 
Add salt, pepper, oregano & chilly flakes 
Now add boiled rice to it. 
Cook well on high flame. 
And your healthy exotic fried rice is ready 
Serve it hot.. You can add cheese too.

Chocolate cake


Hello friends... Today I m sharing chocolate cake recipe with you all. 
There is hardly anyone who will not like to Have this yummiest dessert. Chocolate cake is the most demanded recipe. I hope that all my readers are going to love me for this one. My family loved it.. So now it's time for you to impress your loved ones 


Ingredients:
Maida (all purpose flour): 1 cup 
Cocoa powder: 3 tbsp
Coffee powder: 1/2 tbsp
Salt: 1 pinch 
Curd: 1 cup (fresh)
Ground sugar: 1 cup
Baking powder: 1 tsp
Baking soda: 1/2 tsp
Refined oil or melted butter: 1/2 cup
Vanilla essence: 1/2 tsp
Riped banana pury: 1 (1 banana )
Chopped roasted almonds and walnut: 1/2 cup 
Milk as required

For icing : 
Dark chocolate compound 1 cube
Milk chocolate compound  1 cube 
White chocolate compound  1 cube
Fresh cream : 1 spoon 
Whipped cream: 1 bowl 
Chocolate balls for decoration 
Chocolate sticks for decoration 

Method:

Seive maida, cocoa powder, coffee and salt.


In a separate bowl take curd, ground sugar, baking powder and baking soda  and mix it well with the help of a beating machine. When it starts bubling add melted butter or oil, essence and banana purée. Mix it well 
Now add sieved maida mixture and almonds 
(Banana acts as a leavening and raising agent . It is a perfect substitute of an egg
It makes your cake fluffy and soft) 

Add milk aa required and make a smooth batter 
This batter is comparatively smoother than normal cakes 

Pour the batter in a greased tin and bake it in a preheated oven at 180 degree for 35 to 40 mins 



After baking keep the mould to rest for 15 mins and then take the cake out


After the sponge cake is At normal temperature, take a knife and cut the cake in 2 equal parts. 

For choc  Ganash: take one cube of dark chocolate compound and one cube of milk  chocolate compound and let it melt in a microwave for 2 minutes. 
Take care that the chocolate doesn't get over cooked. 
Mix 1 spoon fresh cream to the mixture
Make sure that the cream is at room temperature other wise the ganash will become extra thick 
Spread ganash equally in middle layer, top layer and All the sides of the cake with help of a palate knife .
After this, take white compound chocolate and melt it and add it in a cone. 
Make straight horizontal lines on the cake 
With white chocolate 
With the help of a toothpick first take the toothpick downward and next line upwards. N repeat it 

With the help of icing bag , use nosals and make small flower with whipped cream 
And use choco sticks to surround the cake and make it more presentable and tasty 

Now use chocolate balls to complete the garnishing and your chocolate cake is all set to eat. 

Try this cake for sure.. You are going to get too many complements for it.

Dill kababs


Hello friends.. Don't go just by the name. It's not usual Dil shaped kababs. I have prepared my kababs using DILL leaves which is popularly called sua in Hindi.
As its winter time, variety of greens are easily available in markets. 
DILL leaves has a unique but pleasant flavour. And it's very benificial for our body too. It's a great anti- oxidant & contains disease preventing as well as health promoting properties.
Dill leaves are use in preparing vegetables but I know kababs will give a interesting twist to it.
It's rich in many vital vitamins like frolic acid, vitamin A & vitamin C that is essential for optimum metabolism in human body.
So please try and taste this unique recipe 
I m sure you will love it 

Ingrediants: 
Chopped Dill leaves : 2 bowls
Split Bengal gram : 1 bowl ( chana dal)
Coriander : 4 spoons 
Gram flour : 1 bowl ( or less as per consistency )
Green chilly : 4 ( finely chopped)
Red chilly powder : 1 spoon 
Turmeric : 1/4th spoon 
Ajwain : 1/2 spoon ( Carom seeds)
Hing : 1/4th spoon (asafoetida)
Salt to taste 

Process: 
Wash dill leaves with clean water. And  chop finely. Soak chana dal for almost 3 hours and crush it and add red chilly powder, asafoetida(hung), ajwain, salt to the mixture 
Add the crushed chana dal mixture to chopped dill leaves 
Add coriander and chopped green chillies 
Add gram flour as required.

Grease your hands with oil and shape the kababs 
Heat the oil on medium flame and deep fry the dill kababs 
 



Serve them hot with onion rings and fried green chillies

Thin crust pizza


Pizza needs no definition... The round shaped tasty thing in a square shaped box is almost everyone's choice.

But there is one question every time.
Can we make restaurant type pizzas at home.. And my answer to your question is yes ofcourse.
Thin crust pizza with freshly made dough tastes out of the world.


Ingredients: 

For base:
Maida ( all purpose flour) : 3 cups
Dry Yeast: 1 spoon 
Water: 1 glass 
Sugar: 1/2 spoon 
Salt: to taste 

For pizza:

Veggies for topping 
( green, red & yellow capsicum 
Blanched baby corn, sweet corn )
Jelapano 
Olives
Basil leaves 
Processed cheese 
Mozzarella cheese
Oregano 
Chilly flakes
Salt 

Method: 

For dough:

Take 1 spoon dry yeast in a bowl,  1/2 spoon sugar & pinch of salt. Add 1 glass warm water to the bowl and keep the bowl in dark hot place for atleast 15 mins  to activate. 

Take 3 cup maida( all purpose flour) in a bowl. Add the activated yeast and salt .
Add more water if required. Make a soft dough.
Fold the side of dough downside and grease with oil. Cover it with a wet cloth and keep the dough to ferment for atleast  4 to 5 hours. 

The dough will become almost double of its size. Take the dough out of the bowl and punch it with your hands.

For pizza: 
Take a portion of dough and with help of rolling pin make a round shape roti out of it. Keep dusting with flour, it will become easy to make . 
Heat the pan. Grease it with oil and place the roti to the pan. Cover the pan with a lid for 1 minute.


Turn the pizza base around and spread pizza sauce on the base . Put some mozzarella cheese & top the pizza with veggies given above. You can add any topping of your choice. Add graded cheese on the pizza. Season it with oregano, chilly flakes & salt 
Let the pizza cook for 4 mins on medium flame. 

When the Cheese melts. Your pizza is ready to be served.
